The Basics
Before you can get to work, you will need to make sure you have the following on hand:

- Lecithin, either liquid or powdered
- Water
- Gummy molds

Getting Started
- Prepare your gummy molds
To prepare your gummy molds for use, spray them with a non-stick cooking spray. Coconut oil is a good choice if you do not wish your trays to get sticky and as a result, difficult to grip. You may wish to place them on a baking tray for easier transport back and forth to your workstation.
- Boil the infusion
Combine the infused coconut oil, water and lecithin in a small saucepan and boil on medium heat. Mix until the ingredients are combined and increase the heat setting to medium high. From there, add in the unflavored gelatin, making sure to continue whisking all the while. Once that has been blended smoothly into the mixture, add in the flavored gelatin.
- Whisk on low heat
When everything has settled into a smooth blend, turn the heat down and continue to whisk. The mixture should be bubbling, but it should no longer be boiling.
- Fill your molds
As the mixture continues to bubble, it will get thicker and thicker. Therefore, you only have a very short window of time to fill your molds. Make sure you do so quickly, before the mixture has had the chance to thicken too much.
- Place molds in fridge
After filling in the molds, place your gummies in the fridge for a minimum of 30 minutes. This will give them sufficient time to harden.
- Store well
Have your gummies hardened? If so, it’s time to pop them out of the molds, store them in an airtight container and enjoy whenever you need to!
